I currently teach professional lactation and nutrition courses through my business, Global Lactation Education Associates. There are 3 main courses, each exceeding 45 continuing education hours. Courses are available as in-person, online, and hybrid.
I also teach courses to patients at my private practice (Cary Lactation and Nutrition Specialists). These classes include: Prenatal Nutrition, Managing Your Gestational Diabetes, Nutrition while Lactating, and Solid Start Infant Nutrition.
I am qualified and willing to teach any nutrition courses, including nutrition throughout the lifecycle, public health, clinical nutrition/medical nutrition therapy, etc. I would also be interested in teaching research methods and (research) theory courses.

I have an extensive history with mentoring students. I first began mentoring dietetic students while at the Arizona Dept of Health Services. I have also had the privilege of mentoring nutrition and lactation students while employed at Central Arizona College, Arizona State University, the Women’s Birth and Wellness Center (WBWC), and my lactation businesses (Global Lactation Education Assoc. and Cary Lactation and Nutrition Specialists). I recently had a Meredith College student complete her enrichment rotation with me; I have another student scheduled to do their enrichment rotation with me in January 2024.

I love seeing a passion ignited to learn more about any given nutrition subject. Nutrition students are the best! They enjoy making connections between food, their bodies, the environment, and their health. I love seeing students grow in their abilities as both clinicians and scholars.
Student Testimonials
“The IBLCE Exam Review course was SO helpful and gave me the confidence I needed to take and pass the IBCLC exam! The workbook highlights essential breastfeeding skills needed not only to pass the exam, but to be successful in the clinic setting as well. Will be a great resource for years to come.”
— Cate R., Dietitian/Nutritionist
“Amanda, thank you for this class. It was so good! I feel like I know you well, even though I’ve not met you in person. Thanks for your teaching style. You were calm and very competent and just had a great disposition. Thanks again. I really enjoyed this class.”
— Brenda S., Nurse
“The Advanced Lactation Management course was extensive and covered a lot of topics, there were a few different people in different fields that covered some material which was great to see different occupations and the application of breastfeeding in those areas.”
— Kaylee R., Dietitian/Nutritionist
“Dr. Watkins makes learning difficult material so easy! I was very concerned about the physiology section because I found A&P hard and didn’t do well in the nutrition course I had to take in college. I don’t know how you did it—but you made it fun and non-threatening. Sincerely, thank you for all you do.”
